Apple Raisin Rum
Cake
Ingredients:
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup evaporated milk
4 tablespoons rum or rum extract
2 1/2 cups peeled and chopped tart apples
1 cup raisins
1 cup chopped walnuts or pecans
Method:
Grease a 9 x 13-inch baking pan. Set aside.
In a large mixing bowl, cream together the butter, sugar and brown
sugar until fluffy. Beat in the eggs one at a time.
In a separate mixing bowl, sift the flour with the baking
powder, salt, baking soda, cinnamon, and nutmeg. Add the flour
mixture alternately with the milk and rum or rum extract to the
sugar mixture. Add the apples, raisins and nuts. Pour the batter
into prepared baking pan.
Bake at 350 degrees for 40 minutes or until a toothpick or
butter knife inserted in the center comes out clean.
