Baked Oysters
Ingredients:
46 oysters
2 tbsp crème fraiche
coarse salt
2 tbsp slightly stale breadcrumbs
1 generous tbsp melted butter
finely grated zest of 1/2 lemon
2 tsp finely chopped parsley
I tsp finely chopped coriander
pepper
Method:
Preheat the oven 230C/450F/Gas Mark8
Open the oysters leaving them on the shell
Drain off the liquor stain and mix about 2tbsp of it with the
crème fraiche.
Arrange the oysters on a bed of coarse salt on a shallow
ovenproof dish.
Spoon a little of the cream mixture over each oyster.
Mix the breadcrumbs with the remaining ingredients sprinkle
thickly over the oysters then bake for 510
minutes at most until the breadcrumbs are lightly browned.
Serve immediately
