> CHRISTMAS COOKIES
Chocolate Chip
Cookies
Ingredients:
2 1/2 cups oats, old-fashioned
1/2 cup butter, (1 stick) softened
1 cup sugar, granulated
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 bag semisweet chocolate chips, (6 ounces)
2 ounces semi-sweet chocolate, chopped in chunks
1 cup chopped pecans
Method:
1. Heat oven to 375 degrees. Place oats in blender or food
processor fitted with metal blade. Process until texture of fine
powder; set aside.
2. Beat butter and sugars in bowl of electric mixer until light
and fluffy. Beat in buttermilk, eggs and vanilla.
3. Whisk together oat powder, flour, baking powder, baking soda
and salt in large bowl. Add to butter mixture with chocolate chips,
chopped chocolate and nuts. Stir to combine.
4. Drop by rounded tablespoon on ungreased baking sheet
2-inches apart. Bake until lightly browned, 10 to 12 minutes. Cool
on wire rack.
