Delicious Ambrosia Recipes
Light Christmas Desserts/Salads with Fruits and
Coconut
Ambrosia is the name applied to a number of types of
desserts in which fruit and coconut are combined and is a
southern favorite.
In the mythology of ancient Greece, ambrosia was the name
given to the food and drink of the gods. It was revered as the
source of their immortality. The Greeks also fed it to the
horses that drew the chariot of the sun across the sky. Mere
mortals who were privileged to taste ambrosia were said to have
acquired increased strength, swiftness, and beauty.
Unfortunately, no such spectacular promises are made to people
who eat ambrosia today.
In its simplest form, ambrosia is made of sliced juicy
oranges sprinkled with grated or shredded coconut, and sugar. In
variations, other fruits, such as pineapple and bananas, are
added for a combination of fruit flavors but oranges and coconut
remain as the base.
We twist the classic ambrosia to come up
with a few variations that are light and healthy for a special
holiday party or your family Christmas dinner or lunch.
