Christmas Appetizers
Crabmeat Alma
Ingredients:
1 stick butter
1/2 cup finely chopped parsley
1 cup sliced mushrooms
2 cups light cream
1/2 cup dry sherry or dry white wine
salt and cayenne pepper -- to taste
1 small bunch green onions -- chopped
1/2 cup finely chopped celery
3 tablespoons flour
2 cups grated Swiss cheese
1 pound crabmeat
Method:
Melt butter in a heavy saucepan. Sauté mushrooms and green
onions until soft. Blend in flour and add cream. Heat until
thickened. Add cheese and heat until it has melted. Add sherry,
parsley, salt, and cayenne. Fold in crabmeat. Heat gently for 8 to
10 minutes. Serve with French bread or in patty shells.
