Cranberry Sauce

Ingredients:

100g caster sugar
150ml water
finely grated rind of 1 orange
225g fresh cranberries

Method:

Wash and pick over the cranberries removing any stalks grit and shriveled fruits.

In a saucepan place the sugar and water. Stand the pan over a gentle heat and stir to dissolve the sugar.

Add the orange rind and cranberries.

Cover with a lid and cook over a low heat until the cranberries are cooked you can usually hear them bursting.

This takes 810 minutes.

Stir well and serve warm or refrigerate until needed.

The color of cranberry sauce is attractive on the Christmas table. It is even delicious served with cold meats. This sauce will not keep for long so if you want to make the most of cranberries in the shops you will need to freeze any extra fruit. This is quick and easy to make and much nicer than anything from a jar.
