Christmas Day Fare
Custard Sauce
Ingredients:
3 tbsp custard powder
2 tbsp sugar
600m1 milk
grated rind and juice of 2 oranges
3 tbsp brandy
Serves 8
Method:
In a small basin blend together the custard powder and sugar to
a paste with a little milk. In a saucepan bring the remaining milk
to the boil pour onto the custard mixture.
Stir well return to the pan.
Over a gentle heat bring to the boil whilst stirring.
Allow to boil and thicken.
Add the and and juice of 2 oranges and the brandy if using.
Taste and adjust sugar if necessary.
This recipe is for a basic custard sauce but to ring the changes
add some orange rind and juice or some brandy or both. A well
flavored sauce is particularly good with a lighter less rich
Christmas pudding.
