Fruit Crepes

Ingredients:
Crepes:
1 cup milk
1 egg
1 cup all-purpose flour
Pinch of salt
Vegetable oil
Filling:
Available seasonal fruits
Whipped cream
Garnish and Serve:
Custard Sauce or Fruit Sauce
Heavy Cream, whipped
Strawberry Crush or any Jam
Mint Leaves
Method:
Crepes:
Mix first 4 ingredients well, making sure no lumps remain. Heat
a small, preferably Teflon-coated frying pan on the stove. Put a
little vegetable oil in the pan and one-quarter of the batter and
cook like thin pancakes until golden brown. Repeat with the rest of
the batter. Makes 4 crepes.
Filling:
Mix chopped fruits with whipped cream to bind them. Spoon this
fruit filling on to the crepes and roll them. Place the filled,
rolled crepes on a serving plate.
To Serve:
Pour chilled flavored custard sauce on the crepes. Flavor the
sauce with fruit preserves. Garnish with cream and mint leaves.
Serve chilled.
