Meatless Shepherd Pie

Ingredients:

5 peeled potatoes
4 tbsp butter
2 cups milk
1/2 cup kasha or couscous
1/2 cup finely chopped onion
2 finely chopped carrots
2 chopped garlic cloves
2 cups sliced mushrooms
1 tbsp flour

Directions:

Preheat oven to 350 degrees. In a large pot on the stovetop, boil water for the potatoes. Add potatoes and cook until tender. Drain potatoes, then mash with milk and butter. In another pan, boil kasha or couscous and transfer to a mixing bowl. Sautee the vegetables in a hot skillet with butter. Then, layer in a greased pie pan as follows: potatoes, kasha, and vegetables. Bake for 35 minutes.
