Day Dinner Menu
Lettuce with Port Dressing
For 1 cup Port Wine:
Ingredients:
6 tablespoons corn oil
3 tablespoons red wine vinegar
1/2 cup port wine
1 teaspoon chopped tarragon (optional)
salt and pepper
Method:
Beat the oil with the vinegar port wine and salt and pepper to
taste until well blended. Alternatively place all the ingredients
in a screwtop jar or bottle and shake vigorously to blend.
Add the tarragon if used just before serving mixing or shaking
well to combine.
This is the perfect festive season dressing for Christmas and
Thanksgiving. Use it on crisp lettuce or melon salads. A little
chopped tarragon can be added lust before serving to introduce a
subtle flavor.
