Turkey, Yam and Bean Salad
Ingredients:
2 yams or sweet potatoes peeled and diced
1 pound green beans cut into 2 inch pieces
4 cups diced cooked turkey
1 large red bell pepper seeded de ribbed and cut into strips
leaves from 1 large head curly endive torn into bite sized
pieces
dressing:
2 tablespoon minced shallots 1 1 1/2 teaspoons minced fresh
rosemary or 1/2 teaspoon dried rosemary
1 tablespoon hotsweet mustard
1/4 cup red wine vinegar
1/2 cup olive oil
salt and freshly ground pepper to taste
Method:
Cook yams in salted simmering water until tender about 15
minutes.
Drain and let cool.
Cook green beans in salted simmering water until crisp and
tender (about 4 minutes).
Drain under cold water.
Let cool.
In a large serving bowl combine turkey yams green beans bell
pepper and curly endive.
In a small bowl whisk all dressing ingredients together until
well blended. Taste and adjust seasoning.
Toss salad with dressing.
